There's a nice shift from Occitan:

(starting with /i u e o ɛ ɔ a/)
u o → y ɔ
e → œ (!!)
(leaving /i u ɛ œ ɔ a/)

And another one from New Zealand English

ɪ ɛ æ ʌ → ə ɪ ɛ ɐ
